On modern emulators, you can use analysers to detect patterns in order to generate more efficient code.

Or perhaps you can make a Chip8 disassembler so you can learn about coding an analyser to detect which parts of the code are executable code and which parts are data. For example maybe make it support a specific gamepad natively, use Vulkan instead of SDL or OpenGL, add a native performance overlay with framerate and frametime, there are many ideas to expand upon. If you find it too easy, you can add your own spin to make it a bit more challenging. Most people code a Chip8 emulator, you can do that in a day or two as the existing documentation is extensive and there are many code samples. Maybe you have a niche non-game application that doesn't work and the issue and the fix are straightforward. Most people start poking around and trying to figure out if there's anything they can start by fixing. Maybe you could contribute to the networking stack, so it can become compatible with more games. Or to the input code (gamepad/keyboard), improving current input methods or adding new ones. You could, for example, contribute to the UI code. There are many parts of emulators that need to be worked on, you don't necessarily need to know about emulation to contribute to an emulator.
